Inspired by our travels. This dish has a lot of rich flavor.
Today we turned 12 Short Ribs & 10 lbs of Chicken into 50 servings.
Tortilla-Lime Soup
Manchego Arepas
Dairy-Free Arepas (option)
Braised-Pulled Short Rib
Braised-Pulled Chicken
Roasted Peppers
Apple-Mango-Pineapple Caribbean Crisp
Transfer to Bakeware. Bake Arepas and Roasted Peppers 375 for 12-15 min or until Arepas feel warm and light. Best not to microwave Arepas.
Heat Short Rib and Chicken on Microwave or Pan.
Top the warm Arepas with either the Short Rib and/or Chicken. And Enjoy!!
The crisp can be eaten at room temperature or slightly warm. Serve with Ice Cream or Whip Cream.
